Cod is a lean, cold-water fish with flaky white flesh.
Cod isn't farmed anywhere, it's wild-caught only. Pacific cod's range stretches from the Bering Strait down through the Yellow Sea, and ours is caught in those northern Pacific waters and processed in Qingdao, the same hub as our other seafood.
- Very lean, with a high protein-to-fat ratio compared to an oily fish like sardines or salmon
- A source of vitamin B12, iodine and selenium, which a lean white fish still carries with the fat gone
- The low fat content is also why the freeze-dried flesh is light and flakes apart easily
