The scallop's single muscle is dense enough to hold its shape.
Scallops live on the seafloor and are one of the few shellfish that can swim, clapping their shell together in short bursts powered by one large muscle. Ours are farmed, sourced and processed in Shandong, the same hub as the rest of our seafood range.

Scallops have a ring of small eyes along the edge of their shell, sometimes dozens of them, which they use to sense light and movement, not to see detail.
