Prawns keep their curled shape once freeze-dried, shell and all.
Ours is tiger prawn, not the vannamei (whiteleg shrimp) most shrimp products use. Tiger prawn grows bigger and firmer, with a richer, more pronounced flavour, and is farmed in far smaller volumes than vannamei.

- Naturally contains astaxanthin, the same antioxidant pigment found in krill, part of what turns the shell pink-orange

The "tiger" in the name comes from the dark stripes banding its shell, which fade to the pink you see on a freeze-dried or cooked prawn.
