Shishamo is a small schooling fish eaten whole, bones and all.
Shishamo is caught wild in the cold waters of Canada, Iceland and Norway. It's never farmed, since a fish that spawns in such large natural numbers has never made farming worth the cost. We get ours direct from Qingdao, Shandong, where most of the catch is sent for processing.

"Shishamo" comes from the Ainu language and means "willow-leaf fish," named for an old Ainu story that willow leaves falling into a river turned into the fish.
